Spinach Lasagna Recipe

spinach lasagna recipe

1 medium onion, chopped
2 cloves garlic (1/4 tsp. garlic powder)
2 c. spinach (1 box frozen, chopped, thawed)
1 (15 oz.) Ricotta cheese
1 can Italian seasoned tomatoes
1 can tomato sauce
8 oz. Mozzarella cheese
1 egg
Parmesan cheese, grated
Salt and pepper to taste
Lasagna noodles

Saute onion and garlic in a little oil. Add tomatoes, sauce, and spinach. Mix cheeses and eggs in a separate bowl. Pour 1 cup sauce in 13x9x2 inch baking dish. Layer 4 cooked lasagna noodles, 1/2 cheese mixture, and 1/2 remaining sauce. Repeat layers. Top with Parmesan. Bake at 350 degrees for 40 minutes.
